I need help, but I think I'm talking to the wrong group of people. Just ordered an ash catcher, hinged grate, and poultry hanger for my PBC. At least I waited until I had cooked a few times to see if I really needed them. That's what I'm telling my wife, anyway.
Any suggestions for using the hinged grates, or applications where you find it handy to have?
OK ash catcher, hinged grate, poultry hanger writing my list.. Oh OK I'll need a PBC as well....
Addiction???? What addiction? I don't have one!
Ceramic cooker, another kettle and SNS...still writing my list.. Just a shopping list...I don't need help!
Good story! You just keep the story tellin genre going for you wife and she will get used to it. Then you can occasionally drop a big one on her. We will wait for both the big grin that you will enjoy, & we will play close attention to the whopper you tell, so all us here can use it. We are all into building the library of MCS.
Oh, and Steve Steve Vojtek, keep your list going. See, that's what this site is all about, learnin & growin.
Started Low-N-Slow BBQ in 2012. Obviously, it's taken hold (in chronological order:

3.) #WhoDat1, a HUGE Gravity Fed Insulated Cabinet Smoker (cooking chamber 3'x2'x6')
4.) A Full Size Commercial Dryer/converted to Vertical Smoker.
5.) Jambo Backyard stickburner (my FAVORITE Pit so far)
6.) GrillMeister, a huge 24"x48" Adjustable, Charcoal Grill from Pitmaker.com
7.) 22" Weber Kettle with Slow-N-Sear
8.) Vault insulated reverse-flow cabinet smoker from Pitmaker
9.) BarbecueFiretruck...under development
10.) 26 foot BBQ Vending Trailer equipped with HUGE Myron Mixon 72xc smoker is HERE, Oct 2016!
11.) Opened www.PaulsRibShackBarbecue.com Food Trailer officially in March 2017
12.) Austin Smoke Works 500 Gallon Propane Tank Offset Smoker, named "Lucille" as travel pit for PaulsRibShack, Oct 2018.
12.) Opening Brick & Mortar location at 4800 Nelson Rd, Spring 2019. Had a pair of 1,000 Gallon Austin Smoke Works pits, both in RibShackRed for our new place!
Fabulous Backlit Thermapens, several Maverick Remote Thermometers (don't use any remotes anymore), Thermoworks Smoke, Other Thermoworks toys, Vacuum sealer, lots and lots of equipment...
I'm loving using BBQ to make friends and build connections.
I have #theRibList where I keep a list of new and old friends and whenever I'm cooking, I make 1 to 20 extra and share the joy.
I always wait until I've cooked something good, "Wow that was great." "Oh, that's because I bought A. Wait until you see how it comes out when B gets here."
Barrettd I still have my hinged grate sitting unused, but I was planning to use it next weekend to do a couple of rib racks alongside a bunch of sweet potatoes and an acorn squash. I've seen others use the grate to combo up some sausages, too. That looked fun! Gotta find that picture I saw a few weeks ago with the PBC filled to the brim with meat...
Nice! I also like the idea of starting something like ribs, and throwing on some chicken wings or something. I just find myself wanting to cook more and more stuff on the PBC and I think the new toys will help.
Well, with each session using 8+ lbs of brix, it's in your best interests to plan for cooking up extra food. If I want chicken for dinner, I buy two or three and throw them all on. My wife loves using shredded chicken in dishes; always some in the freezer.
