PBC Chicken wings

    PBC Chicken wings

    has anybody noticed on on the PBC site that Noah is cooking the wings with the rods out? I have done 2 cooks with them in and they are chewy. I have wings now ready to put in pbc and was wondering if anyone has cooked wings with the rods out?

    I always leave the rods out when possible when doing poultry. HOT temps baby!!!

      Agreed! 325 F minimum ... better yet, 350 - 375 for poultry of any kind.

          Yeah, and turkey. I have a VENTA installed on my lid that I can crack open and let that baby get to 400 degrees.

        also you use the grate on do not hang or you use one rod and leave the other rod out?

          Obviously, if you're hanging a bird, then you'll need at least one rebar in. The recommended temps remain the same, however. That usually means cracking the lid a bit (on an unmodified PBC) to get and keep temps up.

          I should also mention that, if you're hanging one or more birds from a single rebar, it's not uncommon to route the rebar diagonally in order to keep things more centered over the charcoal basket.

                the wife and I just finished off the wings that I did with you-all inst. about higher heat. got temp. up to 375 and they were the best wings that I have done on the pbc. THANKS for all the input. and I am going to look into a install of a venta.

                Planner47 What I do when I cook chicken is first fire up the PBC according to fzxdoc's method then with one rebar in, hang the chicken (I cook whole chicken cut in half), then I take a piece of tin foil about 2" long and 1" wide, fold it in half and fold it over the rim of the PBC then set the lid. This gives me temps of 360 to 380 and turns out the best chicken I have had to date. I would expect you should get the same results using the grate for wings as you're mainly interested in temps.
