    First cook on PBC

    My first cook was a Chicken. I can't believe how moist and juicy the chicken came out. I took one rod out and it settled in around 335-340 degrees. Made for a nice crispy skin and only took about 1 1/2 hours. Very happy with my PBC. I did get a little off center when I cut it in half. But all in all.....OK.

    PBC chicken is awesome. What rub did you use on it?

      I used the All Purpose Pit Rub that came with the smoker.

        Chicken half's was my 2nd Cook! (Ribs my 1st) Can't get mine to keep those high temps Though. Mine got up to 317 then dropped back down to 240 to 250. Both cooks my heat ran out about 3 and half hours in. Afraid to try any longer cooks but I'll get up the nerve soon enough. Oh and Great looking Chicken you got there!! Looks perfect!!

          It was about 40 degrees here,today. When I first started it, it was still a bit low of my target of 325-350, so I cracked the lid a bit to bring it up. Only left it cracked for about 10 min's then closed it. Another 10 min's and it settled in and stayed there. Hope this helps.

        LarryO47 I think I got old Charcoal!! (probably not a thing I know) I dont use the Blue bag I get the competition stuff they have at Costco (and is on sale now at mine) had to look to find the regular stuff finally did at Lowes the bags had dust on them from being under the self for so long. I'm hoping that is my main problem. Gonna try the stacking deal I saw on a earrler post. love the hole in the middle to pour the lit coals into. (my pours have not been so equal) think I'm gonna try a Tri tip (another short cook lol)

          I am going to do ribs,tomorrow. I used the regular Kingsford for my cook. Good luck with the tri tip. Looking forward to see how you make out.
