      Thanks for the kind comments folks. I always chart my cooks, so I got some GREAT data on this cook and it certainly won't be the last time I do brisket! It's just going to be a party dish because my wife and I simply can't eat that volume of meat by ourselves. I'm over my irrational "brisket fear" now. lol It's most certainly worth the effort!!

          First, wow, whata brisket!!!!! I second your use of Texas Tea aka Texas Mop Sauce. Made a brisket for Thanksgiving, soaked in the sauces - people preferred it over the turkey, especially the point chunks. Just sayin.

            What a beauty of a brisket cook, PappyBBQ ! Thank you for the wonderful writeup and the mouthwatering photos. They could be centerfolds for a BBQ magazine. Good to know too that the OCD coal alignment method worked well.

              Great lookin cook. Loved your write up, pics etc. I started to stack the Spinaker OCD basket one time and I wasn't OCD enough to finish it out, but I now know on my next brisket I'm going to take a Zanex and see if I can take it to the finish line. Thanks again for your post.

                It IS a bit frustrating doing the OCD stack. Adding a favorite beverage to the mix certainly didn't help matters! Need plenty of patience and all of your fine motor skills!

              Wow, what a great cook. That looks amazing. Gonna have to try my own Costco next time, that was a good looking packer.

              I'm going to have to try the OCD method next time. My coals ran out after about 7 hours during my Super Bowl brisket cook.
