Occasionally I see full racks of beef back ribs at our grocery and decided what the heck, they were cheap so why not? When I unwrapped to brine I found they would have been better for soup bones - very little meat for their size. Since I didn't have a plan B at that point went ahead and brined with some PBC all purpose rub. Also noticed the rack was not well connected so cut it in half to hang with less weight. Also whipped up a pan of pinto beans to cook at the same time using the PBC hinged grate and with two small chunks of oak got the cook started. PBC ran right around 280 and with ribs so lean finished quickly in about 2-1/2 hours. The ribs were intense and the beans having picked up some smoke were simply awesome. Served all with some cole slaw and once again couldn't be happier with the PBC.

The beef ribs in my local megamarts are generally beyond being worthy of even the label "shiners". When they go on sale, I buy a pack to boost my beef stock making. I've switched to short ribs for beef. Someday, maybe I'll buy a whole rib roast and take the bones off with enough meat attached to make them worthy of Q.
