I posted about this mod in another thread but figured I should probably separate it out just in case someone else wants to do it...
I have added grate rests to enable using two more grates on the original PBC. I hang nearly everything but sometimes I just want to add a pan to catch rendered fat or I have too many chicken wings for one grate. I experimented with hanging a rack with metal strapping tape and that works pretty well, but limits me to only 1 addition rack. To get two more in there I shortened the L brackets in the PBC, drilled holes about 4" below and above the L brackets and bolted a coupler nut to the inside of the PBC. (I think they were 5/8 but could be 3/8. Got 'em at Home Depot)
The same size rack works perfectly at all three levels and food at the bottom gets done only slightly faster than food at the top. When I'm doing wings I just swap racks at the 20 min. mark then finish the cook (another 20 min).
I'll stop with the words and post pics...





All I have to do is tilt the rack just a bit to squeeze past the couple nuts and L brackets. I've been able to smoke two racks of wings at the same time and the tilting is so minimal that they don't slide off when squeezing past the couplers. (I'd smoke 3 if I had 3 grates... but I don't have that yet.
I'm working on a whole new Skewer Hanging System that should let me hang my wings and smoke 108 wings at one time. I'm going to try it out tomorrow and see what happens!
