    6 racks of ribs in PBC

    Hello Fellow Pit Members,

    Quick question for som eo you that do larger cooks. I've never done more than two racks of ribs on my PBC. Tomorrow having a large group over and plan on doing six. Any thing I need to know about how the extra volume will affect the cook?

    The only thing I would say, is try to make sure the ribs aren't dripping wet when you put them on. All that meat dripping right away can effect the fire a bit. Other than that, the PBC will rip through those like nuthin'. Make sure we get to see some pictures of the feast!! Good luck Obi!

    It'll probably run a little cooler than when you're only cooking two racks. I find that it takes a fair amount of meat mass in the PBC to get it to run along at its "normal" 275 - 290 deg. F. With only a couple of racks, mine likes 300(ish) better. Just allow a little extra time and all will be well. Enjoy!

    What Mbmorgan said...whenever I load my PBC down, the cooking times are longer--not by a whole lot, usually, but upwards of half an hour or so. My usual 275-degree-loving PBC hovers down in the 250-260 range when loaded.

    Thanks for the insight everyone. They came out great. Everyone loved them. There was hardly any difference except in time. Maybe 45 minutes longer than what I've done in the past. But after a year and a half of owning my PBC I think I really have my vent really dialed in. The ribs were done in just over 4 hours but the coals just burned along for 8 1/2 hours.         Very nice cook. You've got me drooling for some long-overdue ribs.

        Temp is going to be 64o here today, so the Kettle/SnS won't have any problem knocking off a couple of racks.

          It's been perfect weather here in Houston for a week. Not much better than cooking outside in 60 degree weather.

        I love those beans!! Right over the fire. Like they were meant to be cooked. The PBC strikes again!

          This was my first time cooking beans that way. They picked up so much smokiness. Also, instead of bacon I used some left over ham that I had frozen my Christmas that I also did on the PBC. Really kicked them up a notch.
