Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

This was also an experiment, I know I only needed a 3 hr cook, so I only used one layer of unlit coals in the basket and topped with 40 lit coals, its was in the 40's outside.
More than 6 hours--120 in basket, 40 in chimney
Between 4 & 6--80 in basket, 40 in chimney
Between 1 & 4--40 in basket , 40 in chimney
Less than 1 hour--10 in basket, 40 in chimneyLast edited by Wolffy; January 10, 2017, 09:22 PM.

Nice looking cook you've got there, Wolffy . Did you happen to monitor the PBC temperature during the cook?
I bet there was hardly anything left of that tasty haul from the PBC. It must have disappeared fast.

Really nice. The one complaint I get from others re the PBC is the amount of charcoal it uses. I normally respond that buying good smoking wood for a stick burner would be similar.
I really am interested in your briquet/time chart and how it proves out. Please post your results as you get them. I tried a reduced amount of briquettes once, and was not happy with the results, although it may have been another unknown factor.

Gosh dang the subliminal messaging Wolffy - your pre-cook photo looks like you were creatively spelling out G-I-N. Hmmm, where is the dry vermouth around here

Very clever to note that, kill2grill. Now I'm not only hungry, I'm thirsty too. This topic is tickling my taste buds.
