PBC Christmas gift thread

Awoke Sunday morning to a big box... must've been a pain for my wife to get it into the house! Also got a gift card for accessories from the kids; turkey holder, cover and hinged grate on order.
Hope to fire it up tomorrow. I pulled two racks of St. Louis ribs out of the freezer yesterday, so I'll pull them out of the vac bags today and dry brine them overnight. Just hope the weather calms down; it dropped back down to under freezing last night (we actually just got power back 30 minutes ago after a big windstorm here). I've read that the temps don't matter much to the PBC, unlike trying to run my Weber kettle for a 15 hour pork butt smoke.

You're gonna like that PBC abandonedbrain. To add to what @Ischweig mentioned, also make sure you don't fire it up while it's on carpet
Give pork butt a try! That's one of my favorite things to cook in the PBC. Maybe my #1 fav.

That, or any kind of bird. There are just so many things the PBC does so well on.

I've really only done pork butt and a couple of ribs this summer as my go-to smoking projects. The butts put my wife's decision to buy the PBC over the edge; she saw what 15 hours of babying the vents did to me!Chicken after the ribs, for sure.

Congrats your going to love your new cooker. Chicken, turkey, pork butt, ribs... Yes I could go on, all are excellent on the PBC.
My favorite is Chuck Roast, oh yes the heavenly chuckie!!! Enjoy!
