Has anyone other than myself found that cooking steaks (rib eyes) on the PBC grill grate takes longer than the recommended (video) times. Their recommended time of 6 minutes per side is way under done (really rare). I always light my charcoal as per their recommended (video) time. It took me 10 minutes per side to get a medium rare steak. My steaks were 1.5 inches per steak (2). Also...when I cook the signature chicken per the video my chickens take about an additional hour of cook time to get completely done. I never have a problem with my pork ribs though. Just wonderin'.

I just did some chicken quarters averaging 335f and took 1 hour 5 minutes using fxzdoc's method of starting the pbc for chicken cooks - she aims for 400f before putting the meat on and then running it around 350 for the cook. I didn't quite maintain it - its in this thread too. Money shots below - check the juice in the chicken breast.

RBJ , welcome to the Pit! You discovered the same thing I did when I first got my PBC a few years ago--following some of Noah's methods on the PBC site did not result in as consistent a result as I wanted. Still, it was a great place to start.
One of the essential tools to have with a PBC is a good remote digital thermometer like a Maverick. Meathead has some great reviews on this type of thermometer here: http://amazingribs.com/bbq_equipment...ws-and-ratings
