    PBC Help PLEASE....

    I have lit the PBC exactly like fzxdoc has explained and the PBC website but I cannot get the temp above 217 F.. I need the PBC experts help please.

    Leave the lid off for 5 minutes. If the temps don't SOAR when you put the lid back on then something's wrong.

      Of course the lid off trick only works if you have well lit charcoal

        David Parrish I filled the charcoal basket then I took out 40 coals and put in the fire chimney until well lit and dump back in charcoal basket, left the lid off for maybe 5 mins while I go get the ribs. I then hung the ribs and put the lid on and watch the temp drop to now 216 F. and holding steady.

          Crack the lid until smoke starts billowing. That's a sign coal is igniting. Might take 2 to 3 minutes. The temp will go up when you close the lid.

            OK, David Parrish I crack the lid and let the temp climb to 160. After closing the lid the temp has fallen 8 F. while typing this comment. 10 F.

              160 was a typo right?

              Where is your thermometer probe and is it too close to the meat?

              How many racks of ribs do you have in there?

                Yes it was I meant 260 F.

                  The probe is hanging about 8" down in center of bar. I have 6 racks on (4 0n one bar and 2 on the other). the temp. is 237 F. now

                    OH. Well 6 racks is gonna bring temps down. 237 F is probably about right. As the racks warm up the PBC might warm up a bit. I think you're good.

                            I will post pics when I take them off (good or bad). The ribs that I did Friday night in my opinion were overcook but I was out number by 18 guest that absolutely love them but I think they had a few beers too.

                            They're also probably used to Applebee's ribs!
