Well hell, I just just couldn't take it no longer and I figured since fuzzydaddy got him one that he can teach me how to cook with the damn thing. That's right I order me one of these PBC things so I can see what the fuss is all about. Of course it will be the 10th of Nov. before I can get home to try it out.

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.

I absolutely love it DWCowles one of the coolest features is the adjustable tuning plates. If the temps start to go crazy left to right I can compensate for it by moving them a little. This makes temp control pretty easy. Thanks for asking.

DWCowles what in the Lord's name? Well now, this speaks volumes about you. Full of character and enough passion for great food to experiment. I suspect it won't take you long to come up with some great cooks, then some insightful comparisons to other cooks you've done a thousand times. A believe a cook like you can turn out awesome vittles from about anything that holds fire, so I'm sure you're PBC will be no problem.

I don't have a stickburner. I would really like to have one, but a smaller backyard in the leftist Republic of California with our dictatorial air resources board isn't really conducive to one. Anyway, after I bought the BGE my use of the PBC went down a bit -except for ribs! I wouldn't cook ribs any way but on the PBC as it is so easy and does such a good job. And I can easily cook more on it that on the XL BGE which would have to have extra grids to cook eight racks. Plus, it is good for extra real estate when I have a party.
