Cookers:
Large Big Green Egg with a Ceramic Grill Store rack system, and the SnS setup.
Weber Genesis SA-E-330 LP INDIGO with SS Grates, Weber Crafted frame kit, baking stone, griddle (2/3), all from Ace Hardware.
For the first time in a long time I have no kettles as I gave them all away.
Everything Else:
SnS #3 with certificate. I was their first customer.
Sous Vide equipment.
SnS and Thermoworks instant read and leave-in thermometers.
Grill Grates for BGE.
Kingsford Blue Bag, Weber lighter cubes, Weber charcoal chimneys.
Rubs with salt: Meat Church Holy Cow.
Rubs without salt: Home-mixed versions of previously sold SnS Grills Rocky's Rub and Not Just for Beef using their recipe. SPOG.
Spices: Lots of 'em.
I love the PBC's ease of startup and use. Temps held steady. Shorter cook time was awesome. Great smoke ring to show off and ribs had the right amount of smoke for my family. Waiting to hear from my neighbor that I gave a rack of ribs to. Cleanup also was easy. Zero issues. It just did its thing. When removing the lid for a quick look the temps recovered very quickly. I'm very happy and will be smoking a pork butt later this week.

Sweet! Great documentation! I believe I see a PBC in my future. I'm really, really enjoying the Gateway Drum (I won this one last year). Hanging ribs is an awesome thing.

These baby back ribs were very meaty, weighing in at 3.5 pounds per rack. Next cook I'm determined to find some less than 3 pounds. I did remove the membrane.

Man this thread is making me crazy. Do I need another cooker? Hmm... Let's see. Have my first 22" Weber kettle from 1975, a 3 year old Weber Performer w/ SNS, Green Mountain Davey Crockett pellet grill and a two burner Camp Chef gas stove built in on my screened in patio that runs a Camp Chef barbecue box, pizza oven and huge stainless griddle for lots of cooking options a bit out of the weather when necessary. No I don't need another cooker but hell yes I want a PBC and now because of this thread it might happen sooner than expected.... lol Thanks guys - I got it bad, huh?

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
