Is because I forgot I had 8 hooks! Just goes to show I'm still a newbie on my PBC!

Reese Bobby from "Talladega Nights": "Oh hell, Son, I was high that day. That doesn't make any sense at all, you can be second, third, fourth... hell you can even be fifth." Translation -- you do your best, that's what matters!
Using a medium Green Egg, and yes, I have a Thermapen!

Cookers:
SnS 22” Kettle and rotisserie.
Weber Genesis SA-E-330 LP INDIGO with SS Grates, Weber Crafted frame kit, baking stone, griddle (2/3), all from Ace Hardware.
Everything Else:
SnS #3 with certificate. I was their first customer.
Sous Vide equipment.
SnS and Thermoworks iInstant read and leave-in thermometers.
Grill Grates.
Kingsford Blue Bag, Weber lighter cubes, Weber charcoal chimneys.
Rubs with salt: Meat Church Holy Cow, Meathead's Red Meat.
Rubs without salt: Home-mixed versions of previously sold SnS Grills Rocky's Rub and Not Just for Beef using their recipe.
Spices: Lots of 'em.
Beautiful ribs and great color! I like your work table. I usually cook only 1 or 2 racks on my kettle. I don't have a PBC...yet.

I have a medium BGE and the best I can usually do is 2 short baby backs without involving a rack. This hadn't been an issue as it's just me and my wife with no kids. But lately I'm kind of semi-catering a local wrestling promotion in Atlanta, and I needed the extra capacity!

Also, the Craftsman workbench perfect for a PBC. Great for loading\off-loading, and a place to put my Maverick thermometer!

Also, forgot to mention..... I used Meathead's Memphis Dust on these ribs! Not only did the wrestlers I cooked these for loved the flavor, they asked for the rub recipe. So I pointed them this way.

Awesome! We like Memphis Dust so much I think my wife might throw a fit if I used anything else, but one of these days I'm going to try a different rub and I might get a whole rack of ribs to myself, which would not be a bad thing.

Well, other than making my own with the Memphis Dust recipe, I do like Oakridge BBQ Dominator Sweet Rib Rub or Butcher BBQ Premium Rub.
