Multiple Packer Briskets in one cook on PBC

All,

I have smoked 6 or 8 briskets since getting my PBC 2 years ago..... However, I have agreed to smoke 2 16 pound packers this Sat for a party starting at 5pm Sat evening. I have read thru the forums and saw where Jerod has smoked multiple briskets at the same time. I have always wrapped mine at approx 150-160 and placed on the grate to bring up to 200. But I don't see how I can fit 2 wrapped briskets on the grate if I do them both in the same PBC..... I do have access to a 2nd PBC from a friend, but I would like to know from others how they handle this problem...... Thanxxx, Jeff

Cut the thickest part of the points off, lay an extra grate on top of the flats that are on the original grate, then lay the points on that extra grate.

Welcome to the pit! I haven't tried multiple briskets, but I know a lot of people here will finish cooks in the oven once the meat is wrapped - at that point, heat is heat.

You can finish it in the oven. That is the easiest way. Thats what I would do. Or you can just not wrap them and let her buck until its time to pull them off.

Welcome to another PBC enthusiast. I Like brisket finished unwrapped so I can get a crunchier crust all over, so I'd just hang and cook.
