Hey everyone! Just wanted to share some pics from my cook this past Sunday. It had been a long time since I have cooked, and my Pit Barrel is in bad shape , so much so I ended up buying the new version (I know the new one has been out for some time now). Just received it today and already I can see how much better it is built. Looking forward to breaking it in this weekend! So I cooked a simple rack of St. Louis Style ribs, and a bunch of wings.. They came out perfect, and the cook held at 280 the entire time. I used the pit barrel beef and game rub, and I have to say it's just too salty for my liking. Does anyone have a recommendation of a rub that is low on the salt?

Check out the recipe for Meatheads memphis dust. Easy to make, no salt in it. You add salt via a dry brine the night before. Very economical too... A fraction of the cost of store bought stuff which usually has salt as the first or second ingredient. There are a few store bought beef ribs I use which I'll mix with BBBR for beef...

Spices: Lots of 'em.
For ribs (and pork butts) I like Memphis Dust. For chicken, Herbs de Provence or Simon & Garfunkel or salt, pepper and garlic. Your ribs and wings look delicious!
