I have an 11lb Pork Shoulder Picnic I'm going to cook in my PBC on Labor Day. Anyone cooked Picnics in their PBCs? I'm guessing it will take between 6-8 hours. Anyone else do this?

I cooked a 10 lb butt about three weeks ago. started at 9 in the morning and finished at about 5:30 but I was trying to keep the temps low. I had to use the
Texas crutch to speed up the process at the end because we were late for a birthday party (I also increased the temps when I did this). So if you just use the PBC like the website I would say you could get done that early but if your keeping the temps between 220 and 260 it will take alot longer.
The result was amazing so don't worry about that.

11lb. pork shoulder picnic, trimmed down to 10 - 10.5 lbs.
Dry rub - F.A. Nino's Jamaican Dry Rub
Hung as directed
Coals started with chimney (13 minute burn)
6 hours until 160 degrees
Double wrapped in foil, 1/2 cup Sierra Nevada October Fest added, set on grill
2 hours until 198 Degrees
Had to add coals after 7 hours as coals just about done, barrel temp at 218. I added about 15
Served 10, left overs for maybe three sandwiches
A big hit. Very moist and flavorful.
Time to cook was a longer than I thought, probably due to size.
