Boneless Pork Shoulder. Tie them up and Hang or on the rack? p
I'm getting ready to do a pair of boneless pork shoulder roast on the PBC. I picked up the 2 pack from Costco and forgot all about the fact that they are boneless. I want to hang all the way thru the stall and then switch to the rack. I'm just kinda worried about hanging these things.
It looks like a small bomb went off inside of the roast and blew the bone out. I can't believe how hacked up they are to get that bone out. So I am struggling to feel confident about hanging and I'm wondering what drawbacks there might be to smoking them on the rack the whole time.
I tie them up. Do the two going long ways across first, and do at least two going the other way. Fix it so the hooks go under one of them, and I let them hang the whole cook. I do it all the time.

You can see the strings going long ways in the pic below. Best to do a couple going the other way. Almost lost a couple butts into the fire doing none or even just one.
