Brisket Question

    Brisket Question

    So I'm cooking my 3rd brisket on my PBC and have one question. If the brisket is touching the coals do you cut some off so it's not touching or do you just let it fly? I don't recall it happening on the first one but the last two it did happen and I ended up cutting it off but was curious if it's absolutely necessary to do that. Thanks!

    You could hang it sideways
    or
    you can make some truly true "burnt ends"

    I've never cooked one that big... but my first inclination would be to trim.

      You could separate the flat and the point and hang them individually. I let mine "fly" and they turn out great still.

        gwkruger , many folks with PBCs (myself included) cut part of the brisket off and hang it separately when one end hangs too close to the fire and there's not enough room to hook and hang the nether end on the other rebar if more than one brisket or other goodies are in the smoker at the same time. I know for sure that our PBC brisketmeister Jerod Broussard does, and his smokey footsteps are good ones to follow.

        No point in sacrificing good meat like that to the BBQ gods.

          I cut the thickest part of the point off. On my first multiple brisket cook, I had two briskets touching the coals and two briskets actually laying on the coals, and it didn't do anything to the meat, just did a good job of snuffing out my coals.

            Use the multiple hook method where you interlock them and hang it on the second hook till it starts to shrink. Then move it to the top most hook.

            I did my first brisket this way, hung it for the duration of the cook. It turned out great.

              My last couple of brisket cooks, I've actually just smoked it on the grate and skipped hanging. Weird to not hang on the PBC, I know, but with the bigger briskets, if I can fit it on the grate, I just do it that way and eliminates any worries of it hanging too low (and I don't have to move from hooks to grate later in the cook as it gets tender). I've also separated the point and the flat and hung them when the brisket is too long.

              Hanging sideways like Thom Emery suggested sounds like a neat idea!
