And I managed it without burning down the neighborhood!

A very nice day today I must say... Ribs in the can for four hours or so. Added a chicken at the 3.5 hour mark, and ran it for two hours. After the ribs came off, I goosed the temp over 320 F. The sound out of the barrel while the chicken was cooking was like a four foot bowl of rice krispies!

It's super dry... No lawn mowing for more than a month...
Now all we need is a weeks worth of rain... Just not all at once.

6 oz. Of hickory for the ribs... I tossed in about the same amount of Apple for the chicken. I've got a ton of Apple thanks to a downed tree this past spring!

Well it turns out that it was just three of us. What is truly great is how well things freeze. True it's not quite like just out of the barrel, but it's close!

I know the feeling, JPP ,when I'm eager to have a big cookfest on the PBC, but there are only two of us at home to eat it. Nothing wrong with having some good smoked eats in the freezer ready and waiting for 'Q craving.
