I went with Flank Steaks (mainly because it was what the family wanted tonight!)
Located in Winchester Va (altitude 725 feet), started cooking at around 730 pm air temp was 76
Simple salt and pepper applied to both sides
Followed fzxdoc's lighting instructions on her sticky thread (thank you)
Used my new thermoworks Therm a Q air temp probe to get an idea of PBC temperature (hung probe from rebar at flank steak level) during set up phase and cooking phase
Pulled both steaks at 30 minutes (temp was 141 on my instant read thermometer )
Let rest for 10-15 minutes and cut against the grain
Came out beautiful!


Looking forward to trying chicken and ribs tomorrow (both in fridge now with rub applied and a little baking powder on the chicken hoping to crisp that skin up!)
