    Jamaican Jerk Chicken on Pitbarrel Cooker

    Hey, for all you people talking about your jerk chicken, how are you cooking with a PBC? I would like to order some pimento wood and make some on my PBC but I'm not sure if I can just throw the wood in the charcoal bed or if I need to use the grate and place the wood on the grate and then place the chicken directly on the wood.

    Any tips/advice for authentic jerk chicken on the PBC will be welcomed. Thanks in advance!

    Throw the wood directly on the fire in the fire basket. And run it HOT. At least 350 F. I like to use Dizzy Pig Jamaican Firewalk rub. Its really good stuff.

        Our favorite is a rif on Bobby Flay's jerk recipe. Feel free to use lots of hot peppers, they are greatly cooled during the cook.
