    Finish butt in the oven?

    I put a 9 pound butt on this morning and let it go for 5 1/2 hours, and I'm still at 162 degrees. Not sure how long it would take to get up to 200 on the PBC (and wanting to eat 3 hours from now) I wrapped it and put it in my oven. What would be the highest temp to run the oven at? I imagine I don't want to go too hot ...

    I imagine 250 to 300 would be ok. Hotter if you put some liquid in with the butt. Hope you make your time schedule! I haven't got that part done yet always a couple hours late.

      I always start way early, figuring a couple hour stint in a cambro benefits the finished product and makes sure I'm ready when it's eating time.

    If I wrap I generally just go back on the PBC on the grate. If I was going to finish it in the oven I'd probably go for close to the same temp the PBC was running at - say 270. But wrapped it should now power through the stall and you could probably push the oven to 300? YMMV and I'm sure others will have thoughts.

      375 IMO and I've successfully finished at that temp. Pull around 203, but most importantly, let it rest.

        Thanks guys! It's wrapped with liquid, set the oven at 300 and an hour later we're showing 201 on the internal. Going to shut it off and let it hold there.

          For future reference, if you have coals still going, you could wrap and keep it in your cooker. But then you miss you house smelling like a BBQ joint!

            Thanks Huskie, yes I am aware of that. My concern was that the temp in the PBC would not be hot enough to finish the butt in time.

            The PBC tends to run pretty hot. >160 degrees.
