Season both sides of a boneless skinless thigh, place half of a seeded jalapeño with a chunk of cream cheese in the center of the rough side, cream cheese down. Fold the thigh around it, wrap it with thick cut bacon, drop it in to the mini loaf pan. Put a tablespoon of butter on each one, and put it in the smoker/grill at 275-300 for about an hour, long enough to get it almost to temp. Take em out of the pan and put back on the grate for 10 mins to dry out and crisp up a little. Season again at that point. After 10 mins is up, dunk in warmed sauce of your choice, back on for 10 mis to set the sauce. Magic...

Just use whatever you like. In prep I hit them with memphis dust and when they came out of the pan I used some kickin chicken...

Hey I am doing some bacon wrapped thighs tonight. I'm trying to work on my chicken game this summer. I think I am going to run the BBK at about 325 direct heat. Any thoughts? I am also so curious if I need the muffin pan for the thighs. I don't have one but I can pick one up if ned be. Thanks!!
