Man, EVERY time i put chicken into my PBC I am simply blown away by the results. This past weekend it was just the wife and me, so I split a whole chicken in half and wet brined it overnight. I wet brine because my wife likes me to put pickling spices into the brine. It's quite tasty and really penetrates the flesh. Before cooking I used MeatHead's Memphis Dust. Put half into a "set it and forget it" (who remembers that slogan?) electric rotisserie for the wife, and the other half into a blazing PBC for me. I mean DANG! That chicken outta the PBC was simply heaven. Crispy skin, moisture just running out of the meat... I just can't get enough PBC chicken. I mean, I can come home from work and have chicken ready to eat in 90 minutes tops. Seems no matter what I cook in the PBC, a chicken will find it's way into the barrel before the cook is done! Just can't resist.

With you PappyBBQ. Many folks have mumbled "this is the best shit I ever ate" with their head down and mouth full of PBC chicken as dinner guests. It's SO EASY too. I think you could slather left over mashed potatoes on a darn chicken and it would come put awesome from a PBC

Totally agree. I call mine the bird whisperer. Lol. Hands down best chicken and turkey I have ever had. It does it so constantly and effortlessly too. I often tell people if I never do anything else on it that it was still worth every penny!

Man, you guys!, now I have to get a PBC to augment my other stuff. My wife(the person that allows me to live with her..lol)and I eat a lot of chicken, and a PBC would add another component to our outdoor kitchen. I love my kommado, but sometimes I wish I had more capacity for larger recipes. After I get the rest of my drum set together(we're getting our old band back together and cymbals are NOT cheap), it might be time to pull the trigger.

Very simple actually. The recipe is for 1 chicken split in half. You can leave the chicken whole if it's not too big for a 1 gallon ziplock. I split the chicken as it fits into the bag better...
1/2 gallon water
1/2 cup kosher salt
1/4 cup brown sugar
2T Pickling spices
2 T Memphis Dust
Bring all ingredients to boiling point and then let cool completely. Throw everything in the ziplock bag overnight. Remove from brine in the morning, rinse well and dry. Let sit uncovered in fridge until time to cook.
