has anyone ever cooked 17 pounds of Butts at once in a PBC?
Costco had the Swift Boneless Two Packs for around $20. I wouldn't want to freeze one since they are fresh. I figured I would cook them at once, pull them and "FoodSaver" the leftovers.

I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
I did two butts - about 18 lb. last summer in my PBC. I tied each but well, so as not to lose any bits in the fire. Both came out fantastic. Mine was for a block party so there were no leftovers. Went to 165 degrees and then wrapped and placed on the rack to 203 degrees.
I kinda think that with butts there is enough fat running through the meat that for the last two times, I just trimmed the cap entirely off. I didn't dry it out and I don't think I or anyone else for that matter, could tell the difference. For the record they were both around 7-8 lbs.

I trim the fat off too. I much prefer having more bark than I do a layer of fat I'm just going to cut off and throw away.
