Costco ribs three slabs to a package cooked all three but cut in half so as to not burn the end.
These were bigger than baby backs but not as large as St Louis ribs the half pieces were anywhere from 6-7 inches to maybe an inch longer.

Fan showing internal temp low but lots of smoke coming out until 1110 AM when green light became solid. Holding 225 ish and smoke decreasing
Held steady 225 until 1236 indication temp more than 10 low so opened input on the fan which then kicked in. 1241 green light solid so closed air intake on fan. Monitoring temps on the two middle hanging 1/2 racks on each side 171 and 147.
217 getting close to time I wanted to rest the ribs so took the temp up to 250. Temps of the middle two half racks at 183 and 162.
Pulled them off Pit Barrel at 345 as time was getting crunched put in oven Covered in aluminum pan 30 minutes at 300 now oven set at 170 to hold them. I wanted to sauce but ran out of time, probably should have cooked at 250 PBC. Just as loading into truck to take the rain his (Plano Tx - it was pouring driving to the party.
The ribs were great everyone loved them.
For reference I used the Last Meal Rib Rub - which I always use for ribs and a chunk of apple and one of cherry wood for smoke.
Nice smoky flavor and not fall off the bone but a bit of bite required.
