I’m thinking of smoking 2 briskets in my PBC next week. How would that affect cook time? Experiences??

Bud has always been my barley pop.
Been smoking a handful of years, just got serious in the last two or three years. Thanks to AR n @glemn picked up an SnS Kamado for appx 1/3 price of new. I dont think he used it twice. Love AR! keep calm n smoke on! Miss you Bonesy.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
As long as the briskets are not touching, I doubt it will affect cook time. You will be dripping twice the grease into the fire, but in my experience, even a sizeable brisket has less drippings than a Boston butt. If you’ve done two butts in your PBC successfully, and I know many have, two briskets shouldn’t put the fire out.
The biggest concern is if you decide to wrap and put on the grate at some point. With that 18 inch grate they would most certainly be laying on each other.if that happens, just reach in and flip them the other way while wrapped at some point, to even things out.

Not much difference, the only time my cook time extended is if I was running 4. And that was due to the rotations. I would hang for about 5.5hrs and then go to the grate, alternating sides of the briskets to face down. 4 briskets creates a double layer so you have more rotations to go through.
