    Brisket capacity on the PBC

    Anyone ever load the PBC to capacity with brisket? How many can be hung at once? Just curious as I am considering getting one to increase my total cooking capacity with my stick burner.

      4 is what I do these days. It is some work with rotating to bark up and all that. I did 5 once and just by luck the middle one was barked at the 5.5 hour mark when I took them off the hooks to lay on the grate. LAST thing to bark up is the top of the flat. Tried hanging for 8 hours on another cook and the top of the flat still was not barked up and the ends of the flat were petrified.

      I don't like to run much over 250. If I have 15 free hours I will run 225 while they are hanging cause that turns out some sweeeeeeeeeeeeeeeeet brisket.

        So bark creation is an issue for the PBC? I don't like to run over 250 either.

      I have done two shoulders and two briskets before. Things ran fine. I found the hardest thing to be getting everything back out of the PBC.
