    PBC site's video recipes now show Noah using a thermometer.

    I got an email from PBC that they had some new videos up in their recipe section. They have uploaded one for corned beef and one for a leg of lamb. I was interested to see that Noah is using a probe from Thermoworks on his meats in the two videos. Seems a departure from his original view of we don't want people thinking about temp but time. He's still not temping the barrel but I found it interesting.

    One thing I have noticed is it seems that they do pay attention to what people are doing with their product. Everyone putting down foil, we'll make an ash pan. People cutting their grates so they can hang and cook on a grate at some time, we'll make a hinged grate.

    It sometimes makes me wonder if Webber is aware of all the people making products for their stuff and if they are why don't they do it themselves. For instance why doesn't Webber just make it's door better in the WSM or sell their own kit.

    Anyway, I just found it slightly, but not overly, interesting.

    He used a thermometer on the original PBC brisket video. I remember him wrapping waaaaaaay too early for my taste.

    I thought the same thing when I watched the Leg of Lamb video this morning Obi-Dan . I just went back and re-watched it again. He is using the ChefAlarm by Thermoworks. First time I've seen him use a stay-in meat thermometer in one of his videos. Interesting. I also agree with your comment about the Pit Barrel Cooker Company doing a good job of being responsive to their customer's needs by paying attention to the mods and crafting an accessory to fulfill the need. Hopefully they will continue to keep up that commitment to good customer service.

        Hey all, thanks for the kind words on our videos. We are always trying to improve not only our product but our website and videos. We sure have come a long way from our first iPhone camera debut Regarding the meat thermometers, we have always used meat thermometers but we have always advised that adding a temp gauge or monitoring internal temp of the PBC is not needed. The PBC will run at the needed consistent temp when following the proper lighting process. A meat probe is a perfect way to nail it every time and completely takes the guess work out of it.         I actually like not using a grill thermometer. Other smokers with electronics and mechanisms for adding wood seem too easy and less fun. With the PBC, I can pretend like I'm some backwoods grizzled pitmaster guy that doesn't need fancy doohickies even though the PBC makes it just as easy as any other fancy smoker. There's something to be said for lighting the fire and the food is done when it's done.

        I still use food thermometers though. My desire to keep it primitive is not as strong as my desire to not get salmonella.
