    PBC works great for catering

    Did my first corporate catering gig for a company on retreat at a lakeside mansion. Among many other things, smoked chicken with Alabama white sauce was on the menu, and I lugged the PBC to the site to smoke the birds. Worked awesome and had some very happy customers. No pics I'm afraid, hard to have time to do that. But smoked 7 very large 1/2 birds to perfection and got a great tip out of it. Loving this cooker.

    Awesome, I think for small scale stuff, and vertical like chicken and ribs, the efficiency and quality of those things are hard to beat.

                John, I couldn't agree more. I have a small vehicle so a trailer hitched offset is not yet practical (though eventually I want to get a vehicle that could handle it and the smoker so I can large scale events and festivals). In the meantime, I've timelined what I can do for a large barbecue off the pbc and I can comfortably handle 50 no problem. Its pretty awesome for something that only takes up half the trunk space in a honda fit, leaving the rest of the vehicle for coolers/equipment.

                The chickens are just the start, I wanted to test out what it would be like to cook with the pbc at an event so it was one of only a few entrees I was serving. But setting it and forgetting it while working on the nightmare that was the rest of this kitchen (stove had low btu output and no hood in a mansion that sleeps 32, what the what?) made my life so much easier.

                    This isn't surprising. I think I've read that it weighs 35 pounds which makes it portable. The fact that all of the accessories can be stored inside of it for travel makes it rather efficient. Then when it comes to cooking its hanging capacity plus the fact that it runs a bit hot which speeds up cooking times....it seems to be pretty ideal to use when catering for a small group.

                      Closer to 70 pounds in the box ... probably 60ish out of the box with charcoal basket, ash catcher, grill, and rebar (2) inside.
