I am smoking 3 pork butts, and a slab of Baby backs.
I cut the ribs in half and put them each into a corn cob holder sold by Pit Barrel. I used 2 toothpicks above the top bar to keep them from sliding down.
Let's see how this works.
Also using Ry's circle method of starting, with all lit coals in the center. Also 2 chunks of cherry, 1 is big.
I am using the PBX. Initial start temp was 250, then went down to 225. Cracked the lid for 3 minutes now smoking along at 250.
I thought the minion method was scattering the lit coals over the basket.
I had a coffee can with the bottom cut out and placed it in the center of the basket, and poured charcoal around it in the basket.
after the chimney coals were burning I dumped them in the center and removed the can. So it can burn out in a circular fashion.
The coffee can in the middle is the minion method, not the scattering of lit charcoal over the surface of unlit coals. But you can call it the Circle method if you like.
So far, I do not like this lighting method. I have to go out about once an hour to crack the lid to pick the temps back up.
Also toothpicks seem to be working.
It worked. The ribs were 205 IT, and stayed intact in the holders.
P.S. do not forget to remove the toothpicks...
They were wrapped in foil to rest.
Wife liked them and she is not a rib person.
