I have a small-ish (3-4lb) pork loin that I'm cooking along side a chicken, otherwise I'd just put it on the grates. Should I skewer or use meat hooks?

I'd tie it so that it keeps its shape, then hook it so that the string is helping to support its weight as it hangs vertically in the PBC.

I have the grate the hinges so I can hang stuff and cook stuff on the grate. However, if that is not an option now, what@MBMorgan said is good advice.
Have a great cook, sounds like a good meal is in the works.
