I have a reasonable size of guests, 12 people in all, so am thinking of using the pitbarrel. Havent used the Barrel in a long time and my memory is not too good these days. With the ribs hanging I should imagine juices will be lost. Any ideas or experience of retaining the juices? Thanks

Don’t worry about the juices at all! What little falls off goes in the fire & adds flavor. Your Wibs will be delectable. Put a rub on with a little binder, olive oil, water, mustard, which ever one you choose. Just keep it at a little. Hang the Wibs & let em smoke. They will be juicy, yes they will. If’n you are talkin pork Wibs it’ll take you 4 1/2 to 5 hours. Check em at 4. Good cookin!

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
You will be fine. I don't have the PBC, but have smoked many slabs of ribs on many cookers over the years. You don't need to try and catch/save juices from ribs, and the PBC will turn them out nice and juicy. Just be sure to double-hook if you have enough hooks, to avoid any unexpected sacrifice to the fire...

I enjoy cooking ribs (pork or beef), pork belly, brisket, burgers, ribeyes, chicken (usually boneless/skinless thighs), and skirt steak for carne asada.
Beverages - Alcohol isn't my jam.
I agree with FireMan and @fzdoc. Water is the only binder I use. I'll be doing 4 slabs of ribs on the PBC this weekend as well.
As far as how much charcoal, etc. to use, there was a great post a few weeks back:
I made a rack of Beef Plate Ribs only once before, and it was by following a recipe for a Weber charcoal grill that was in Cook's Country magazine. It used a charcoal snake and it turned out fine. Today I wanted to try it again only on my PBC. The recipe on their website is drastically different than the Texas-Style Beef Rib

Double-hooking is a really good suggestions for full racks. But if you're only cooking a few racks, you can just cut them in half and single-hook the halves separately. They'll be light enough that they are highly unlikely to drop off the hook and short enough for the bottom ends to be comfortably away from the coals.Originally posted by jfmorris View PostYou will be fine.
