    My PBC 10 year anniversary, time for the Suburban of the Pit Barrel Cookers!

    Im coming up on my ten year anniversary of smoking with my PBC (July 2013). It has a great patina now but every time I cook I wonder if the bottom is about to drop out due to the rust. Since I am starting to do larger cooks for more people, I figured it would be better to get the PBX instead of another PBC. Ill still use the PBC until it actually dies on me, but Im looking forward to the extra capacity.

          Let us know how you like cooking on the PBX when you get it, Nixican . And take a photo if you have the time. Pit Barrels are so pretty when they're bright and shiny.

          My OG PBC is pushing 10 years but so far there are no signs of rust. I may have to put it in my will.

            That's impressive! Ive never covered my PBC since Ive owned it so its totally my fault. I bought a cover with the PBX though. Gotta look good for the gram these days!. Ill take some side by side photos when the PBX arrives. I have a smoke for 40 people next weekend and that will be her maiden voyage!

          I will be using the Fireboard Drive 2 controller with pit viper blower on this drum just like I do on my PBC. I used the BBQ Guru XL Dome Adapter on the PBC to mount my pit viper. Im assuming that same adapter will work on the PBX. Anyone aware if there are better options to adapt the blower?

            I have the PBX. I love that thing. You can cook a TON of food in that bad boy!

            That adaptor might work. I think the hole is the same size, but not sure.

              My first cook went flawlessly! This thing is a monster and I love it!!! I was able to get 8 tritips in without any space problems. I ended up saving two of them for a later cook and kept 6 in there. Temperature was easily controlled with the FireBoard 2 Drive as well. When little kink in the program was the BBQ Guru XL done adapter that I bought. The flange is a little small for the opening on the PBX. The vent port on the PBX is larger than the PBC. I was able to stuff some foil in the gap to fix the problem with this particular cook but I’ll have to figure out a long term solution. I posted pictures to my Instagram account (meatmercenary) but here are a couple from Saturday.


              I sous vide que my tritips. Salt for 8 hours, sous vide for 9 hours at 129, ice bath, add rub, smoke at 225 until internal at 115, pull, sear with rendered brisket fat, top with chimichurri and slice.

              I've repainted mine once.
              when the bottom burned through, I bought a 1/4 steel circle and welded it in place. Its got a A LOT more cooking to do

                Good to know! I love the PBC and would love to buy another controller set up and really increase my capacity!

              I have a PBX and just cooked a small 6.5lbs brisket, 2 tri tips and a 9lbs pork butt together. All turned out great, and I still had space for more.
              Next is at least 3 9 to 10lbs pork butts, and whatever I can come up with by Sunday...

                  I'm tempted by the PBX as well, even though most times I'm only cooking for 2 on the PBC. I don't think I'm tall enough to reach into the bottom of a PBX to remove the double layer of heavy duty aluminum foil with which I cover the bottom of my PBC before each cook for 30-second ash removal.

                  I'm riding my OG nearly 10 year old PBC into the sunset, though, before I buy any new barrel cooker. It's still in great shape. At this rate, I may rust out before my PBC does .

                    My buddy got a PBX and just started using it. He is over the moon about it. I am happy because I turned him on to the PBC.
