Just received my PBC last Thursday and went to town breaking it in on Saturday with Berkshire Pork ribs, two 45/60 day aged steaks and what Costco calls pork briskets. The latter is whats left when trimmed St Louis Style. Also smoked pork bellies (bacon!). First the ribs were a little thin as Berkshire ribs are, second I put the steaks on the grill for smoke flavor as they had been cooked sous vide. My wife sampled steaks before I could get the grill marks. Next up-Prime brisket packer from Costco-$2.69lb. Pictures to follow (I hope)
