What the heck brisket on PBC

    I did my 1st brisket on my new PBC today. 8 lb CAB... hit one 165 in 2 hours. Wrapped in alum foil and back into the cooker. Hit 216 in another 2.5 hours. Wrapped in 4 large bath towels and held in my igloo cooler for 6 hours. Sorry no pictures 😕 Had friends over for dinner and we devoured the brisket. Tender and juicy and still warm even after sitting in the cooler for so long. Friends can't believe I only cooked the brisket for 4.5 hours. Used Meatheads BBBR...no body used BBQ sauce. Em Em Good!

        This was my first PBC brisket Saturday. It was just the flat, no point. Weather was in the teens. I wish I could remember which storebought rub I used. Was a low sodium rub with garlic, pepper, salt, onion, coffee, who knows what else. I salted it a little before applying the rub. Picture looks drier than it actually was, we liked it. My four year old loved it but I think that was because I let him go nuts with the rub shaker - he took ownership of it.

        I cooked from 9 to 2, wrapped and finished in the oven at 225. It seems like my stove does too good a job powering through the stall - it's faster than I wanted it.

        Threw a chicken on since I had fuel left but I ended up needing to add more fuel - I was just guessing at that point but it turned out fine - very forgiving. The charcoal burned fast in the cold weather.
