    Newbie chicken

Cooked some unicorn steaks while pbc was warming up with Kathryn's lighting directions. Was skeptical of steaks on it but they were great. Threw two half chickens on with Noah's all purpose rub just to practice since it was still hot. One rebar, cooked for an hour with cherry chips. Best chicken I've ever made. I love this thing.

Yeah, step-kids absolutely positively didn't eat dark meat. They gladly tear up PBC'd dark meat.

Great looking bird ptehan ! Congrats on a successful cook. As Noah says, the PBC is a chicken cookin' machine.

I could post countless pictures of perfectly cooked chicken....except for last night. My kettle is covered in snow so I cooked a chicken on the gas grill last night. I put the chicken in the middle of the grate and had the middle burner off and had the front and back burners going. After about 45 minutes I decided to check on the chicken for the first time. When I walked into the garage I immediately knew something was wrong as I detected a bunt smell coming from the grill. I opened the lid and found a black chicken. That's right, black. Horrified I stuck in my digital thermometer which takes a few seconds to settle on a temperature and the first number that it flashed was 205. My worst fears confirmed. When my wife grabbed the end of the bone on a leg it disintegrated in her hand. As it turned out that while the breast meat was dry it wasn't Griswold Christmas turkey dry. It was edible and the dark meat was actually juicy. But man, it was SUCH a disappointment and quite embarrassing for me.

The PBC does make some damn fine yard bird, no question.
