Planning on doing a turkey on my PBC this year. I'm planning on hanging it because it's a 20 lb bird. If I recall correctly there's sort of a sweet spot with bird size with the PBC, something around 15-17 lbs? Anyway, anyone have experience with a bigger bird hanging in the PBC? I know you can cook 2 turkeys at a time but they are obviously smaller birds. I'M just not looking to burn the part close to the coals.
Watch your drumsticks and wrap them with foil before they turn to jerky, they will likely dry out well before the rest of the bird. Wings may also need a wrap before it is done.
I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.
