    Finally!!!!

    First cook on the new PBC ... nothing fancy ... just awesome chicken.

    Lighting went smoothly. Temp spiked at approximately 415F then settled down (after some fiddling to help cool it down) right at 300 for the 2 hr. cook. Used the PBC All purpose rub which was pretty good ... but next time (and the wife says there WILL be a next time) I'll go with S&G.

      It's amazing just how good a properly cooked/smoked chicken really tastes. Such a cheap piece of 'budget' meat, but wow how tasty when you know how to cook it! Keep up the good work.

            Nice chicken. Next time try not to fiddle with the PBC when it starts at 415. Let it settle "naturally"

              Yeah ... the fiddling was more out of curiosity about temperature control than out of necessity. It gave me an idea about a simple non-invasive mod, though. If it works, I'll post it with photos. If it doesn't, I'll probably post it anyway.
