First time smoking beef, forgot hooks (traveled to E. TN for xmas at in laws) so meat went straight to the grate. Thanks to meathead's article, had wonderful results with taking meat off at 115 and then reverse searing on gas grill, beautiful medium rare, incredibly juicy and tender. It was a little easier in the rain given my new toy Santa dropped off, igrill2.

Prime Rib for us and a turkey for the neighbors across the street. They had turkey that I had smoked a few weeks previously for our Christmas Party (theme this year, a 1900's Christmas) and liked it so much they asked me to smoke their Christmas Turkey. It turned out well, and they reported their family members said it was the best turkey they had ever eaten. Sweet. Nice when a plan turns out!

I smoked three racks of baby backs on my UDS. I had been talking with a few of you in another thread about hanging ribs and also about using a pizza stone as a baffle above the charcoal basket. I didn't end up hanging the ribs, but I did use the pizza stone and I also tried putting my wood chunks in a dutch oven with holes drilled in the bottom. I want to say that I could see the difference in smoke coming out of the vent, but that may just be wishful thinking. Regardless, the ribs turned out great. My wife and parents said they were the best I've ever made. I thought they were pretty darn good myself. I'll definitely be using the dutch oven trick going forward and probably the pizza stone too.
I know it's blasphemy, but I didn't take any photos. The day was pretty hectic since I was cooking at my house and spending most of the day across town at my parents place . . . happy holidays all!

The prime rib turned out crazy good. Never had one better. The Prime rib was a bit big for the firebox on top but it worked out just fine. I was going to bring over my webber and SNS to do the sear, but things just got too hectic with everything else going on. I also did some lamb chops, which turned out amazing. I actually liked the lamb better that the prime rib. I cooked the lamb chops until about 115 F in the smoke box of the KBQ. Then I moved them to the firebox.
Here is a video of the slicing of the Prime Rib. Defiantly worth a peak!!
