          First cook will be very early January due to impending eye surgery that will keep me out of action for a few days. It won't stop the salivating though... that started when the FedEx truck pulled up this morning. Must remember to stay hydrated ...

                Congrats on the new PBC. Curious to see how long you can go with out making mods to that beast. I think I lasted all of three weeks. Then I just HAD to put my stacks on. Nice job, you have successfully taking the right steps to really up your game. You will not be unsatisfied.

                  Thanks! I'm curious about the stacks, though. I understand the addition of the ball valves for precise airflow control ... but, other than making the PBC look a lot like Will Robinson's robot's little brother, do the stacks add functionality? Also, how do you set the original vent when using the mods (not that I would ever do such a thing 😀)?

                    The stacks defiantly add to functionality. When she is really loaded down. The stacks help to add extra air flow through the cooking chamber. It also helps to up the temp late in the cook to build some serious bark on the those briskets and butts. The increased airflow also helps to drive off the surface moisture which slows the severity of the Stall. I set the original vent to just less than half, where I would normally set it. The stacks work very well for me. Happy I put them on.

                  Sweet!! I should be getting a commission from the PBC folks. I've sold three that I know of! People taste the Q and wonder what I cook on. Deal closed! I haven't had any urge to modify mine. Since moving from my COS I'm still amazed at the lack of attention required to cook successfully on this thing. Now I still twiddle with it to get the temps I want to run at, and I still chart every cook but I simply love not having to adjust vents every 15 minutes! Then again, I don't put near the load on it that some folks in these parts do. Perhaps if I was cooking huge loads all the time I'd consider some of the mods folks here have made. Usually it's just me, the wife, a couple of kids and a few neighbors that come poking around when they smell me Q'ing!
