I had a lot of fun with my PBC this weekend. I decided to put the test to Katherine's lighting method. Everything was going along just perfect. I was down to the last 10 minutes with the lid closed and I went out to check the temperature and I noticed I forgot to take out my 4 little corks I use at the end of a my last cook. (I put corks in the rebar hole to smother the charcoal and save some money.) Anyway that thru the whole thing off and I had to take the lid off and give it some air!
Oh well there is always something to remember and something to learn.
Once I got everything going again I put on a pork butt and a chuck roast. I actually had to add some charcoal at around the 7 hour mark. That was a first. I had a classic stall on the chuckie but powered through it. They were both about 4 pounds. The pork but never really stalled it just cooked nice and slow. I started around 7:00 and finished around 3:00.
They both were right tasty. I took the chuckie to a Christmas party. Several people asked how I cooked it. I got to spread the word about amazingribs.com and the pit barrel cooker.
