    PBC Bisket

    Going to do my first hot and fast brisket. Aged in fridg . Costo prime. No injection.Wrap ? PBC at 300. Im sure it will be good. Just how good? I

    You will love it! I wrap around 180 in butcher paper.

      275° to 290° is where I like to do briskets on the PBC.

      I also wrap when there's a good bark set, usually at 170° to180° . I wrap in foil (less messy) and move that baby to the grate until it probes nice and tender, checking at about 190° or so. Prime briskets can be probe tender at around 195°, but garden variety briskets need to go higher, in my experience. You're going to love the flavor.

          Haven't tried it yet but interested to hear about results. You plan to cambro? I assume no wrap at those temps to build bark right?

            I do plan to cambo. At least an hour, preferably more like 2 hours. I will wrap if I get the desired bark at 170-180 temp. Otherwise I’ll let it roll. Thanks

          I have never gone wrong with a Costco prime. On the other hand i haven't done hot and fast. Looking forward to learning your results. I need to expand my horizons..

            It's going to be amazing!!! The excitement 🤪. . . I did one about a month ago on my PBC and just reading this I'm ready to get another one!! But first I must try a chuck roast. . . Post pics!!!
