My first pork butt on PBC

    Sorry for late responses I was traveling. So PBC went full 10 hours. I had to control airflow in beginning because it was running a little hot with a full basket but nothing tin foil couldn't help with.

    The rub is the Memphis Dust recipe with liberal measurements.

    And unwrapped the entire time. By the time it got to 195 it was ridiculous.

      Glad to hear that it went well. I will be firing up my PBC just after one this afternoon. Doing that Brisket deal.
