The famous "Chicken in a Barrel" started in Hawaii and has been showcased on the Food Network. They just opened a franchise in my city (lucky me!) and the local newspaper interviewed the franchise owner and I thought someone out there might be interested in this...
"We call them hook 'em and hang 'em. We hang them so they are 3 feet away from the heat and we use Kiawe wood & coal. When the juices from the meat hit the coals, it steams the meat in it's own juices."
No real point to this other than the fuel they are using. I never heard of Kiawe before so I thought that was interesting. Good people there...they stayed open on Christmas day and provided free meals to anyone that needed a hot meal or place to go. I think I'll show some support and have lunch there tomorrow.
