I built a UDS and it turned out pretty well. It will hold temps 225-250 no problem. The issue is at these temps my wood chunks won’t produce smoke. If I increase air flow the fire gets too hot. I’m using Jealous Devil XL lump charcoal. Anyone else have this issue? TIA.

I’ve never had that problem, but…….Are you putting one of them on hot coals to begin with? I always let the first chunk start burning and smoking a little first, then close the vents to where I want them……Whether on my ex-Bronco or my kettle.

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
I don't use a UDS, but in my kamado, I bury the wood chunks in the pile of charcoal, so that they burn at random times throughout the cook. I light the fire at the center of the basket.

How does the end product taste? Does it have the smoke profile you want or is it lacking? I haven't used lump very often as I didn't like the up and down temp nature as a large piece would start followed by a smaller piece. However, while I don't recall it producing a lot of visible smoke, I thought the taste and smoke profile was very good.
