Fun thing about the Apollo: it separates in three sections. So after a very productive trip to my new favourite butcher, I got some Grill Grates going on the bottom section (essentially the charcoal basket) and threw on an gorgeous rib steak....
Grill grates work great on a pellet grill/smoker also. Just be sure to buy the correct size for your gill. The ones I bought work very well, but a little to small and can move around when checking the meat.
