    Using a Backwoods G2 Chubby without Water

    I have a Backwoods G2 Chubby that I like a lot. Sometimes though, the bark seems a little too soft as this smoker cooks with a lot of water. I was wondering if anyone has tried a cook without filling the water pan.

      We lost him to cancer about 18 months ago and we still grieve him. He was the best dog we ever had and we have had good dogs for 30 years.

      When my Backwoods Party G2 runs out of water, the temps fly sky high! The water acts as a buffer. Do you wrap your meat? Or let it go without wrapping?

        I don't wrap ribs but i wrap butts and brisket.

      Okay, I have found that not wrapping brisket and pulled pork in my Backwoods produces the best bark of any of my cookers. Because the cooking chamber is so humid, it makes wrapping unnecessary. I find that it slows down my cooks because it pauses the cooking while I wrap and mushes up my bark. Try without wrapping and see what happens!

        The one time I let the G2 run out of water, temps shot up very high. Would not recommend without water. Temps in the G2 are the highest at the top of the cooker. Try positioning your food grate as high as you can.
