Got my new woods G2 Chubby delivered this week and I couldn't wait to try it out. I decided to cook one rack of pork ribs to start to see how the smoker cooks. I didn't expect any great surprises because I have been using a WSM for many years and I thought both smokers used similar approaches. I have added my Fireboard and Viper fan because I had them and used them on my WSM. Set up was pretty easy. I added 2 qts of water to the water pan and that was probably a little short but there was a little bit of water left when the cook was finished. I fired a half chimney of charcoal, put it to the rear of the charcoal bin and then filled the bin with unlit briquets. I used quite a lot of wood compared to the WSM, 5 or six chunks. The cook went very smoothly, temperatures held very steady at 225 degrees F. One noticeable difference was that the cooker had a lot of moisture which was evident around the exhaust stack. Pulled the ribs at five hours and they were done. Bark was nice and hard and the ribs had a nice smoke ring. The only thing I didn't understand was that the temp was dropping about the time I pulled the rack, it was at 213 degrees F at that point. I wondered if the charcoal had burned out at the point but I don't think it should that early. I didn't pull the charcoal bin today because I did not want to deal with the ash yet. I did see some un-burned briquets on the left front of the bin. I will look at that more closely before my next cook.
I love this cooker and I think I will be able to use it without a steep learning curve.
